Wine Poached Eggs

Ingredients
  • Extra virgin olive oil as needed
  • 2 cloves Garlic
  • 4 thick slices Day-old good bread
  • Salt and fresh ground pepper

  • 2 cups Leftover Chianti
  • 4 eggs Removed from shell
  • Grated pecorino or other hard cheese for garnish
  • Chopped fresh parsley leaves for garnish

Directions
  1. Heat wind in a small saucepan. When wine boils, reduce heat to a low simmer. Carefully slip eggs in and cook, spooning wine over them until whites are firm.
  2. Scoop eggs into 2 cups, add a spoon of wine.
  3. Server with bread, garnish with cheese and parsley, and serve.
