Milo’s Homemade Twist Bread

  • 2 1/2 pounds bread flour (high-gluten)
  • 2 tablespoons kosher salt
  • 1/2 cup brown sugar
  • 1/4 cup olive oil

  • 2 1/2 cups water
  • 2 tablespoonsactive dry yeast
  • egg wash


In a large mixing bowl place the flour with the salt

In a separate container put all of the other ingredients except the egg wash. Put the yeast mixture in a warm spot for about 10 minutes or until the yeast activates. It will be foamy on the top.

Pour the yeast combination on the flour & salt, mix with a spoon then turn out onto the counter to finish mixing then knead.

Knead the dough for six to eight minutes or until smooth and elastic. Grease a bowl, put the finished dough in it, lightly oil the top of the dough then cover with plastic wrap or a clean dish towel. Put it in a warm spot until it doubles in size.

Turn the dough out onto the counter, divide into about 30 equal pieces, shape as desired, put on a baking sheet. Brush the tops of the rolls with egg wash then top with a topping that you like. It could be simple like sesame seeds or some combination like parmesan, garlic & herbs or caramelized onions and some fancy salt.

Bake at 375 degrees for about 8 minutes or until browned.
