On two beautiful plates or bowls, divide the seasoned black beans, top each with a crisp corn tortilla, divide the scrambled eggs and chorizo between them, top with another tortilla then top with salsa verde and a dollop of sour cream.
Tomatillo Salsa Verde
A delicious, uncooked, crisp salsa good for eggs, fish, steak or chicken
16 tomatillos, papery husk removed then quartered
½ of a yellow onion
1 poblano pepper, seeds and ribs removed
¼ cup cilantro
1 teaspoon fresh garlic puree
Juice of one lime
Salt & pepper to taste
Place all of the ingredients in a food processor or blender and puree until smooth.
