Focaccia Bread

Ingredients
  • 2 1/2 Cups bread flour
  • 1 package, or scant tablespoon instant yeast
  • 2 teaspoons dried herbs of choice or 2 tablespoons fresh herbs

  • 1/2 to 1 teaspoon salt
  • 1 cup warm water (about 120 degrees)
  • 2 tablespoons olive oil plus more for the pan, and the top of the bread
  • 1 egg

Directions
  1. Oil a quarter-sheet pan, set aside.
  2. In a large bowl, combine 2 cups of the flour, the yeast, herbs and salt.
  3. Stir water, oil and egg into the dry ingredients.
  4. Add enough remaining flour to make a very wet dough. Cover with plastic wrap and let rest for 10 minutes.
  5. Oil hands, pour and scrape dough out into oiled baking pan. (quarter-sheet)
  6. Press dough into corners, dimple and add more olive oil, then toppings.
  7. Let rise until nearly double, about 30 minutes.
  8. Bake at 375° for approximately 25 minutes.

Suggested toppings:

  • Toasted walnuts or pecans.
  • Parmesan or other grated cheese
  • Sun-dried tomatoes
  • Blue cheese
  • Olives
