Cooking with Nicolle at Riegelmann's Appliance

Ingredients
  • 2 cans cannellini beans, slightly drained
  • Olive oil
  • One chopped red bell pepper, or mixture of colors
  • ½ onion, chopped

  • Herbs of choice (I like sage and thyme)
  • Sausage of choice, sliced and browned
  • Salt and pepper to taste

Directions

Using the same pan in which the sausage was browned, sauté onions and peppers in the olive oil until slightly soft, add herbs.

De-glaze pan with a little white wine, add cannellini beans and sausage, heat to boiling. Serve on a bed of arugula.

(Flavored oil or vinaigrette on the arugula is a nice touch.)
