Ingredients
  • 3 – 10oz bags of baby spinach leaves, blanched, well squeezed of excess water, and chopped
  • 4 eggs
  • 1 cup milk
  • 1 cup cream
  • ¼ cup onions, fine diced
  • ½ Tablespoon chopped garlic
  • ½ Tablespoon chopped fresh thyme leaves
  • ¼ teaspoon nutmeg
  • ½ Tablespoon kosher salt
  • ¼ teaspoon black pepper
  • ½ oz butter
  • 1/3 cup bacon bits
  • ¾ cup grated parmesan cheese

Directions
Baked Spinach
Makes 6 / 6oz ramekins
  1. In a sauce pan, add butter, onions, garlic, thyme, salt, pepper, and nutmeg.
  2. Cook covered over very low heat until onions are translucent.
  3. Add milk and cream and bring to a simmer.
  4. Add to a blender with the parmesan cheese and blend to puree onions and cheese.
  5. In a large bowl, mix the eggs and temper in the hot cream mixture.
  6. Add the spinach and bacon bits, mix in well.
  7. Place mixture in baking dishes and bake in a water bath, covered, at 325˚ until custard is just set.
