Oregon Fingerling Potatoes with Smoked Salmon and Avocado
Ingredients
Oregon Fingerling Potatoes with Smoked Salmon and Avocado
  • 1 lbs Oregon Fingerling Potatoes
  • 1 Tbsp Olive Oil
  • 1/2 tsp Salt
  • 1 tsp Smoked Paprika
  • 1/4 tsp Pepper
  • 1 each Avocado
  • 1 Tbsp Fresh Dill
  • 2 Tbsp Lemon Juice
  • 1 tsp Lemon Zest
Directions
Oregon Fingerling Potatoes
with Smoked Salmon and Avocado
  1. Cut potatoes in half length wise, toss fingerling potatoes with olive oil, salt, pepper and smoked paprika.
  2. Roast potatoes @400 degrees for 20 min. or until tender, remove from oven and cool.
  3. Remove skin and pit from avocado, mash avocado with fork, add dill, lemon zest and juice.
  4. Top Potato half with avocado mixture and smoked Salmon, garnish with dill.
