Shrimp Frittata for two

Ingredients
Shrimp Frittata
  • 4 eggs, whisked lightly
  • 1/2 cup cooked shrimp
  • 1 stalk chopped green onion

  • 1/4 cup chopped roasted red pepper or poblanos if you like it spicy
  • 2 oz grated swiss cheese
  • 1 tablespoon butter

Directions
Shrimp Frittata
for two
  1. In a 8 inch, non-stick fry pan, over medium heat, melt the butter, when it starts to foam add the shrimp, green onion, and peppers.
  2. When they are all hot pour in the eggs.
  3. As the eggs start to cook, lift the edge and allow the raw eggs to slide underneath the cooked part.
  4. Repeat this action around the outside of the pan until most of the liquid egg is gone.
  5. Top with the grated swiss cheese then place the whole pan in a warm (350 degree) oven and allow to bake until puffy and the cheese is all melted.
  6. Slip the cooked frittata out of the pan onto a platter, slice and enjoy
