Oregon Potato and Zucchini Pancakes with Mascarpone Cheese
Ingredients
  • 1 ea. Oregon Russet Potato, washed and grated
  • 1 cup Zucchini, grated
  • 1/4 cup Onion, grated
  • 1 ea. Egg, beaten
  • 2 Tbsp. Bread crumbs
  • 1 Tbsp. Flour
  • 2 Tbsp. Dill, Chopped
  • 2 Tbsp. Parsley, chopped
  • Sto taste alt and Pepper
  • as needed Olive oil

Directions
Oregon Potato and Zucchini Pancakes with Mascarpone Cheese
  1. Combine all ingredients and mix well.
  2. In a hot non stick pan or cast iron pan heat olive oil.
  3. Place dollop of potato mixture into pan fry until golden brown then turn over and brown other side until crispy.
  4. Place on paper towel.
  5. Serve hot with whipped mascarpone.
