Oregon Potato and Smoked Salmon Hash with Poached Eggs
Ingredients
  • 2 cups Oregon Red Potatoes, diced and cooked
  • 1/2 cup Sweet Onion, diced
  • 2 tsp. Garlic, minced
  • ½ cup Smoked Bacon, diced
  • 1/2 cup Apple, diced
  • 2 tbsp. Chives, minced
  • 4 oz. Hot smoked Salmon
  • to taste Salt and Pepper

To Poach Eggs
  • 2 ea. Poached Eggs
  • 4 cups Water
  • 1/4 cup White Vinegar

Directions
Oregon Potato and Smoked Salmon Hash with Poached Eggs
Serves 2
  1. Boil whole red Oregon potatoes until tender 15-20 min. then cool and dice.
  2. Saute smoked bacon until crispy add onion, apple and potatoes sauté until potatoes are lightly browned.
  3. Add garlic and smoked salmon.
  4. Sauté until warmed.
  5. Season with Salt and pepper.

To Poach Eggs
  1. bring water and white vinegar to a high simmer carefully crack eggs into simmering water set timer to 3-5 min. or until desired doneness.
  2. Lift from water with slotted spoon and rinse in hot water and pat dry with towel.
  3. Place hash on plate and top with poached eggs, garnish with chives.
  4. Serve with hot sauce if desired
