Gluten Free Banana Nut Muffins with Chocolate Chunks
Ingredients
Banana Nut Muffins
  • 3 mashed bananas
  • 2 eggs
  • ½ cup 1% milk
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract

  • 2 cups brown rice flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon gluten free baking soda
  • 1 Tablespoon honey
  • ¼ cup water
  • 1 cup walnuts or pecans
  • 1 cup chocolate chunks
  • ½ cup mini chocolate chips (for garnish)

Directions
Gluten Free Banana Nut Muffins with Chocolate Chunks
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, mix together bananas and all wet ingredients.
  3. Once combined, add in dry ingredients.
  4. Mix on medium for approximately 1 min.
  5. scoop out batter into spayed or lined muffin tins about ¾ full.
  6. Sprinkle mini chocolate chips on top.
  7. Bake for 25-30 min or until toothpick comes out clean.
  8. Enjoy!
