Dungeness Crab Cake with Blood Orange Aioli
Ingredients
Blood Orange Aioli
  • 2 egg yolks
  • 1tsp Dijon mustard
  • Juice of one blood orange
  • Juice of a 1/2 of lemon
  • Pinch of salt and pepper
  • 1-1 1/2 cups canola oil

Dungeness Crab Cake
  • 1/2 yellow onion small diced
  • 1/2 red bell pepper small diced
  • 2 ribs celery small diced
  • 1 garlic clove minced
  • 2tsp olive oil
  • 1/4 cup dry white wine
  • 1 Tablespoon Old Bay Seasoning
  • 1Tablespoon Dijon mustard
  • 1-11/2 cups mayonnaise
  • 3 egg yolks
  • 1 1/2 pounds Dungeness Crab meat picked
  • 4-5 cups bread crumbs

Directions

Recipe for 6 guests
  1. Sauté onions, bell peppers, garlic and celery until al dente (about 3 minutes), then add the white wine and reduce by about ½.
  2. Place on a plate a cool in your refrigerator.
  3. In a bowl mix the mayonnaise, mustard, Old Bay, and egg yolks.
  4. Pick through the crab meat trying to find any shell remnants that remain.
  5. Add to the wet ingredients, now add the completely cool sautéed vegetables, mix with a spatula.
  6. Add bread crumbs until you get a semi firm “cake”.
  7. In a sauté pan add a few drops of oil and a small piece of “cake”, and cook on both sides until golden brown.
  8. Taste and see if you may need salt or pepper, or maybe more Old Bay or even more bread crumbs.
  9. Before shaping your cakes and cooking, place the mix into your refrigerator for at least 20 minutes if you have the time to allow your flavors to amalgamate together.
  10. Shape 2-3 oz. of mix into a ball, in a sauté pan heat up oil or butter on medium heat and squish the balls down in the pan and cook on each side, about 4 minutes until golden.
  11. Top with your blood orange aioli and some watercress and frisee lettuces.
